This weekend we had the most beautiful weather here in Norwalk, CT. Perfect for a side dish like this one. I loved it so much that I can't wait to share it with you. I roasted some fresh grape tomatoes with just a hint of pepper, salt, and olive oil - set your oven at 400 and roast them for about 25 minutes -. When they are ready, let them cool for a few minutes and mix them with cut fresh peaches and minced mint. Enjoy!
